I'm grouping shopping carts into two main categories - those you run on your own server and those that are hosted someone else's server.

If you are new to shopping carts, then using a cart hosted on someone else's server is probably best.

If you really know what you are doing and want complete control, then running on your own server may be for you.

www.miva.com - Menu driven for basic customization. For more advanced custom pages Miva uses "Miva Script".
www.osCommerce.com - Open source. PHP and MySQL based.
www.shopfactory.com - Many features, customize through menus, don't need to know any html.
